Cilantro, Black Bean, and Corn Salsa {Foodie Friday}

Hi everyone! My name is Chantal and I blog over at Scattered Seashells. I’m wife to an Army pilot and mom to a busy toddler girl. We found ourselves in Alabama a year and a half ago, and we love it here! Our time is getting short, though. Soon, the Army is sending us off to Korea. Whoa!

Facts

I’m a big “dip person.” If it goes on a chip, I’ll eat it. I’m a fan of a good guacamole or homemade salsa. Nothing better than that! Plus, I love getting together around a bowl of chips and dip with friends, eating and chatting. It’s so much fun!

Here is a recipe for a delicious dip that we’ve had recently. Try it out!

Cilantro, Black Bean, and Corn Salsa

Cilantro, Black Bean and Corn Salsa
1 can of yellow corn drained
1 can of white corn drained
2 cans of black beans drained and rinsed
1 can of diced tomatoes
1 bunch of chopped fresh cilantro
5 green onions, sliced
1 small red onion, chopped
1 red bell pepper, chopped
2 avocados, diced
1 TBS minced garlic
1/4 cup lime juice
3 TBS olive oil
3 TBS honey
Mix it all together and eat!!
